I can't find the options to export files in STL format under BatchConverter (from MyCADtool).
As can be seen on the online help:

Manage export options:
This button allows you to access and manage the Solidworks options from the BatchConverter interface in the export formats below.
There is an export option drop-down menu in order to change all export formats. I can't find access to this menu, can you help me?

No export option not in my Batchconverter. I guess it defaults to the solidworks export settings.
Try to do a manual export in solidworks with your options then launch batchconverter with the same part and you compare the 2 exports.
If the same is the same, the export option for the STL is set in SW

Your question challenged me, so I looked on my side...
I don't have that button! I had never paid attention to it... And yet I've been using MyCadTools for years!
It may be an oversight of the help update, the button having been deleted for some time.
If this is blocking for you, don't hesitate to send a ticket to Visiativ support.

When I ask for a modification in general it takes a little longer! ;-)
Indeed, the 2022 SP1 version corrects this problem.
