To cut a part or assembly, nothing could be easier, I'm in the 2018 SP4 version, there is at the top on the central part a cut button and select where you want to cut ...
To sober up the functions or whatever, go to the build tree and right-click and undo the deletion, that should do it.
I don't know what you think about it but I have the impression that @bendesart are not talking about cutting in the sense that we both understand it.
On the other hand I agree 100% with the second part of your proposal "" To sober up functions or others, go to the construction tree and right-click and cancel the deletion, "" on the other hand: what you may not remember @bendesart is that undoing a deletion can make all the constructions related to it appear.
Between us I complain at least once a day because when I delete a function it deletes everything underneath (same with the "hide" function). No matter how much I abuse the plans to avoid this, I continue to be fooled (I must have a fucked neuron)
As answered @A.R and @zozo_mp to sober up a function right-click and cancel the deletion.
The cutting function of solidworks has been improved in recent years. Possibilities of several cutting sections, excluding elements from the section, saving views and surely others
Here is the link for solidworks help and some videos as well as an attached tutorial.
