Is there an option to uncheck a few parts in the system options so that when a sketch has a closed outline it is filled with transparency? (see attached photo.... that will be more telling).
I looked in the solidworks help for the displays but I couldn't find anything......

Do you have to do a mini extrusion and apply a transparent color or texture

Yes on SW2017 it's possible =>tools=>sketch settings=>shaded sketch outlines.
