As I imagine the principle of operation from the image, the mechanism presents at least two mobilities
- the reciprocating movement of the handle;
- the inclination of the connecting rod located on the left...
As for the lid (piston?) of the "kettle": rigid with vertical displacement, or deformable diaphragm?

The tangency constraint may be responsible for the blockage. It is quite capricious when you make changes of position in the assembly.
It is better to put a distance constraint between the center of the roller and the center of the spherical dome (?) of the piston.

First of all, I don't really understand the purpose or the functioning of this pump. An appetizer? An exit? The lever pushes the plunger but doesn't pull it?
Then, in terms of reducing the effort needed for an elderly person to lower the lever, some modifications must be made that better respect the laws governing the effect... lever.
Namely, to bring the pivot point as close as possible to the fulcrum. I would also bend the lever to keep it in a good hand position, since these modifications would change the angle of the lever. Something like this:
