In the MEP for the tapped holes I get a message that it can't find the Callout Format, which means that it doesn't tell me that it's an M5 hole but only Ø 5

Quote Hole Naming Standards
All default standards for hole callouts (ANSI, ISO, Din, etc.) are defined in a text file located in the \solidworks\lang<language>\calloutformat.txt installation directory.
If you need derived drilling standards, you should also define them in this file.
To define a standard for locating derived holes:
Localisez et ouvrez calloutformat.txt.
Copiez et collez le contenu décrivant la norme ANSI.

Thank you for the location! It turns out that I have this file in my computer in the same place. I compared the .txt file, namely yours and mine, and they are strictly identical. By the way, funny thing this file was created on July 4, 2002 (it makes us a little younger)
Note: I still have the problem! I have to find on the net the trick to put this back correctly. For the moment I can't find the link (GRrrrrrr)
My locations are personalized for the most part (you would have to ask for a screenshot from a more " traditional " user to fill in the gaps on your undefined locations: In blue, the path that leads to my file CalloutFormar.txt...
As for the "Drilling Wizard Favorites Database" location: it points to the " favorite " files declared directly in the Drilling Wizard...
… All this brings me to a subsidiary question: When you reinstalled Solidworks, where was your entire toolbox/drilling wizard declared? Normally: " C:\Program Files\SOLIDWORKS Corp\SOLIDWORKS\Toolbox " … Note: Look in Windows Explorer to see if a directory: "C:\Program Files\SOLIDWORKS Corp\SOLIDWORKS (2)"
would not exist on your PC (in this case your redirects will have to be redirected to this location.) the " (2) " indicates a bad uninstall of older versions of Solidworks.
Note: I just activated the Toolbox in the start menu but it doesn't change anything.
I think I'll give up as long as it doesn't bother me too much. These are banal pieces for which I modify the rubbish quotes by hand

Regarding your drawing problem, the calloutformat.txt governs the symbols in the mdp and only the mdp. It should be indicated in the file locations of your system options:
Personally, I have a special one that I modified, the symbolism in the native mdp of Solidworks doesn't suit me.
Solidworks " fixing " won't do anything but waste your time. The easiest way is to Restore the settings, if not a little more brutal, but I find it faster, Registry Editor and you delete the registers related to the Solidworks version:
Another solution before deleting or resetting to factory profile via the registry key you can try to see if the factory profile solves the problem via solidworks RX. To do this, close solidworks. Open Solidworks RX and then click there:
The advantage of my solution is that it is non-destructive at startup according to the Sw parameters are loaded again. If this solves your problem, it's because there is a corrupted option. Either you look for which one or you reset while deleting the reg folder as advised by @geoffrey.gaillard_2 . This solution allows you to check the cause without the risk of making your problem worse through ignorance.

So it didn't point in the right place (the excellent VISIATIV technician arranged everything correctly and everything works again). Apparently it's not a good option to save SLDREG and put it back pos-install because it carries around a lot of invisible stuff (visible only in the BDR)
I can't say more because it's beyond my skills!
So on my HP Laptop I asked for everything to be erased and for a clean reinstallation to be done. So all my personal settings will have to be recreated from scratch. It will make me lose a little time but I hope to have no more PB at least on this machine.

PS: @geoffrey.gaillard_2 The calloutformat is used as soon as you click on "Drilling Wizard" which is also when I got the error message. As I ignored the message I still managed to make my holes in the room without difficulty, but obviously in the MEP I didn't get the information like the Ø, the type, the depth, etc... And I had to fill everything in the mano. (in a hurry I did it, but it couldn't last)
Everything being restored, I would waste less time rewriting everything in the MEP.
