I try to write in my sketch so that I can then make a text in hollow. The problem is that when I write on the curve (straight line) I manage to center the text along the line but not in the middle of the line.

Why do you want the line to be in the middle of the text horizontally?
You can size the line so that the text is where you want it to be without worrying about the guide line

It is not possible to center a sketch text on one line.
You need to shift your line by half of your text height
