I'm looking to make a mold of a part of a wind turbine blade that follows a helical curve on Catia V5R21. Concretely I would like to create two pieces each with a pocket that corresponds to half of the blade profile. Is there a module in Catia that allows you to do this relatively easily?

I don't know of any function for that, at least in the basic Part Design or GSD licenses.
For my part, I draw a large volume from which I remove the volume of the part to be molded by Boolean operation, and I do it for each part of the mold.
The only difficulty is to draw the parting line that will separate the 2 parts of the mold while avoiding undercuts.
