Clicking on a line will create floating icons, and the color and font of the line can be changed.
Maybe you need to create a new line to be able to edit.

I can change the color of the lines in my piece, but I've created construction lines to put annotations and this one I'd like to color. Do you have an idea?

You can use layers with specific colors. Create your layer, then select the entities and assign them to that layer. To display them in color, use the "Color Display Mode" icon.

Yes use the toolbox labeled:
Line Format
This allows you to modify the formats (styles, thicknesses and colors) of your construction lines.

As I said, I think it doesn't work for SolidWorks construction lines, but just for sketches: in this case, create a line, give it the color and style (dotted) you want.
Features generated with the "Construction Line" feature in drawing are colored if they are assigned to a color layer.
I did make a layer on my construction line in red when I validate my choice of layer, either my line disappears or it doesn't change color it remains black. Is it a bug?
