I have assigned colors to my parts in a subassembly (these are the parts that have the colors directly (by sides) but when I put it in an assembly, the colors do not stay and my subassembly becomes gray.

Next to the building tree, you have two small arrows to expand the menu and display the following options for each piece: Hide / Display mode / Appearance / Transparency
Apparently, for each piece you have one or 2 color triangles. The one at the bottom right is the color of your room. The one at the top left is the color of your part in the assembly. Delete it to find the base color of your room.
I hope I've been clear and that it answers your problem. I'm on SW 2010, there may have been evolutions since then.
