In Solidworks 2017, can I break the link with the assembly or the 3D part so as not to change the PM if the 3D file evolves?

You can save it as a detached drawing save as then a detached drawing (3), or else you save it under another name (save+date for example) and the day you want to open the model as it was saved you open it in read-only mode (1 and 2).
