I would like to unfold my piece to be able to make the plan but I can't turn it into sheet metal.
Do you have an idea?

Try selecting the edge shown in the attached image (the edge, not the face) and then Insert/Sheet Metal/Folds

Yes I've already seen this question but it doesn't work, it's a rolled cone me and when I have a fold inserted, it makes me a cylinder.

I don't really see what's blocking (I'm in SW13, no possibility to open your room!)
