I did a few tests and Fonconverter doesn't change the font of the texts in the tables.
Is this normal?
Is there a way for it to work?

No, for the moment, the texts contained in all types of tables are not processed. This is managed from the document options.
Only the notes in the cartridges can be processed or not.
