we would like to have software that allows us to cut complex 3D files in order to get out of small surfaces for laser machining.

Datakit is a CAD converter (software exchange) it is not used to make modifications or operations on the geometry.

To create patterns from solidworks
there is this http://www.exactflat.com among others
It creates flat files of complex surfaces, see the videos is quite impressive
among others a zodiac or the envelope of a car seat
