I'd like to know if it's possible to create a drawing file in 3dvia Composer. That is, can we use a title block and retrieve the properties of the assembly such as the version or the author?

I think that with 3dvia you only get 3D and not drawings.
Yes, it is possible to retrieve custom properties of parts and assemblies.
The idea is to recover the 3d of the assembly in 3Dvia and to make it an assembly protocol with cartridge and properties of the assembly still on 3dvia. Is this possible?

Yes, it is possible to have a function page in the form of a cartridge.
The easiest way is to paste the title block as an image (as a background image) and then in the area of the appropriate boxes put a text that points to the properties of the 3D.
