Since I did the 2021 update, I can no longer open solidworks parts that customers send me because it puts me this message.
can you explain to me how to solve the default templates

Your default templates should point to folders that no longer exist (probably a path related to your previous Solidworks). So you need to redefine these paths. You can also check the box "Ask the user to select a document template" as in the attached image. When opening your client's files (STEP I guess) the template selection window will appear.
