SW is not made to do this kind of thing.
You can get by in a MEP with blocks. But this is tedious and not very scalable.

Yes, it is possible to do it with SolidWorks, but it is really tedious!
I found some software (all free I think, I'm downloading the 1st) that allow you to make schematics:

The second one looks interesting. But it's not free...
