Can a symmetrical part be engraved differently from the original part? If so, how to do it? (on Solidworks 2020)

Hello Fred,
Theoretically no, rather make a configuration because of the text.
For a symmetrical piece is a carbon copy of the original, as soon as the original is modified, the other follows.

Another possibility that is a little similar to that of @A.R:
- make 2 configs in the initial part (with and without engraving);
- In the balanced part, call the configuration without engraving and then add the specific engraving function.
To modify the called configuration: right-click on the initial function in the symmetrical part, "external references", in the table that appears, choose the right configuration.

If your marking is not too complex, you can do one or more "Delete faces" with the option "Remove and fill in discontinuities" so that you erase your marking and redo the one you need
