I would like to create standard parts, which I could insert into an assembly via a toolbox for example as soon as I could specify dimensions.
Let me explain, I manage to create pieces, and assign them different sides via the tables of the families of pieces. But what I would ideally like to have free input windows to enter the desired dimensions manually, rather than a pre-established list.
Is this feasible? Thank you all.

You can use the custom properties window and assign them to dimensions. If you create a length, then width, and thickness property and assign them to the appropriate dimensions, you'll have your input window.

Otherwise there are the library functions: it allows you to insert functions in your room, you can make several configurations if you have several sizes and the dimensions are also editable if you want to go beyond the standard (you better give names to the dimensions of the case).
We use this on a daily basis to draw standardized flanges for piping and it's quite practical (when it works well....).
The big plus is the right click on the function and you change all the dimensions in 1 click by selecting a different size.
