I'm not sure I understand your question, so I'll rephrase.
If we talk about "appearance values" then we must refer to the RAL reference framework
If we talk about appearances themselves in the sense of photoview or Visualize, then they are rather textures referred to under the word appearance. These are files like those of Luxology with the extension LXO.
After what do you want to recover in excel? Is it the colors or the name of the appearance files? Can you elaborate a little please

I think it is looking to generate an excel file that lists the parts and the color (yellow pe, anise pe...) associated with them.

It smells like macro to do that! With probably a neutral file flat between the two.
In the past (WHouououou) there was a macro that colored all the parts of an ASM: but in such a way that no one is the same color.

I already wanted to know if there was any way to get this out in excel with the basic Solid tools or even with the MyCAD tools.

Why not create new custom materials with your colors?
This way you can easily get them in your bills of materials, cartridges,...., and therefore in Excel too.
It's a bit long to create (depending on the amount of different colors per material) but in the long run you will save a lot of time.

The same room can have several different colors, which means that we will have to create configurations to manage the different colors, we have about 10 possible colors, and the rooms already have configurations, it becomes exponential and unmanageable. Hence the fact that only appearances are managed in the assembly. I've already turned the subject around in all directions, that's why my question is very focused on appearances.

In my opinion, it is much easier to manage materials (associated with colors or paints) directly in families of parts (configurations), rather than in an assembly.
By the way, it is very (too) easy to delete/remove appearances in an assembly (right-click on the head assembly / appearance menu/...). Which makes your use risky at the current state.
If you don't want to re-draw all your parts by color, use Configuration Publisher (Solidworks) with a list of choices to select your display states or materials.
There is also the possibility to create a new "Color" property (drop-down menu?) with the Solidworks editor or with (Smartproperties).
Having already done some research on the Macro side for another project (discussed in this forum - but I lost the Name) it is very difficult to retrieve the Names of the Appearances in macro from an assembly (especially with the Display Name (Pe-Yellow / Pe-Red ...), compared to the Real Names of the Solidworks Appearances (File IDs)).
Subsidiary question: Are your appearances applied to bodies, surfaces, functions?

The problem is that these parts already have a certain number of configurations (right, left, with or without text ect...) so having to re-create configurations by color becomes an exponentially monstrous gas plant (we have almost 10 colors). While knowing that the same parts can be in different subsets with different colors colors (so we will also have to create configs by subset) in short I have already returned the subject of configs, it's unplayable :/ .
We apply the colors to the body of the piece.

To this day I still haven't found how to remove this appearance via the name or via any other method.
Indeed it's really not easy.
For my part, the green color is added on the parts and assembly index for the parts, I act on the materials but for the assemblies it is not possible. And the back manipulation is when I want to go back to the previous cue (rather rare and done manually to date)
