If it is a custom material, you should look here:

If it's a SolidWOrks material, I don't think it's possible!

Copy them into personal materials, and rename them, it's simpler and at least, you only use the materials you need.

As @Bart and @PL say, the "yellow" material menus are not editable as such, nor erasable. On the other hand, you can create a personal library of materials (in blue) that can be modified. To quickly retrieve materials from Solidworks (e.g. DIN, structural steel), simply copy and paste it into your personal library. The values can then be edited: you can change the name of the steels, modify the type of hatching,...
