How, if it is possible (but I have no doubt), to dimension an isometric view in a drawing in SolidWorks?

Hello
Simply use the Smart Dimensioning tool on the sketch toolbar and select the features in your isometric drawing view.
Make sure that the view is in true dimensions, so that your odds are correct. (by default when you insert an isometric view on a plane, it changes to isometric)

A small clarification: it does not seem possible to use "Model objects" to rate the trisometric view?...
Indeed, it is not possible, a request for improvement has already been reported to SolidWorks:
