I'm looking for a method to be able to extract a step from an assembly (envelope type) without being able to see the interior design of the assembly when opening the step.

There are two possibilities:
Use Defeature directly integrated with SolidWorks:

Or simpler, choose the "external components" or "external faces" option when registering the assembly as a part and then save as a STEP.

I didn't understand everything: you want to open a STEP part from an ASM STEP but without seeing it in the ASM beforehand?
I have an envelope of my assembly to transmit, I want to extract a step from it where the inside of my assembly is not visible.
OK it works with the method:
Save the assembly in parts, keeping the outer faces.

For my part, I would put the components you want to hide on the "deleted" mode, then you save in STEP and when saving an info window will open to warn you that components are deleted and will ask you if you want to include them. You answer in the negative and then you will only have the components that you have kept.
