And is it possible to call a sheet metal template table by default, when creating a sheet metal? Rather than having to check "use a template table" and then select the table in question.

Not to my knowledge.

The only solution I can see is to create a part model for sheet metal (in addition to the part, assembly and plan models), by creating a first sheet metal function and choosing the template table from it.
