In the properties of your rooms (file, property), you create one with a specific name. Let's say "Item No". From there, you can put the specific number for each piece (1,2,150, etc)
Then, in your drawing, you create your nomenclature. Right-click on it, Insert column (right or left, it's up to you).
An option appears, leaves "custom property" in the column type and will select "Item No" from the second list.
And there you are, your coins appear with the desired number. All you have to do is remove the number column given by default by solidworks (and make yourself a specific model if you plan to reuse this type of nomenclature)

So I agree with you @.PL, it's tedious for a single plan. But if you use your parts on several ... at least you don't have to worry about it anymore.
That said, for the bubble. It does it rather naturally if you have inserted your nomenclature in first and put your collone on the far left (even if the default one is still there).
And, if necessary, you can also go to the properties of your bubble. In bubble text, instead of asking for the article number, you choose "custom properties" and the corresponding name in the second insert.
