In surface
You must start by tracing the profiles with a line and/or a plan. Top, side and rear view etc.
Then, with the help of the surface tools, you build your profile
In solid
I would say that you have to define a bit in the same way when surface to start and then make frames i.e. slices. And build a skeleton. Which you will finally also do in surface.
A bit like an airplane, you have to think skeleton (I'm taking it out of my closet
) of your boat. It will be easier to define a profile for your hull
I prefer CATIA for the surface but SW does it very well
You can also import orthogonal view photos of a hull and insert them into sketches on the different orientation planes. And then trace the primary shapes of your hull into sketches
It's a long time but with perseverance you'll get there. Place a splis move the dots to stick to the desired profile.

Five sketches for defining shell sections, three more for " guide curves", and a smoothed surface feature.
The result looks like the image in the scan.

Be careful not to overmultiply the number of sections, or the number of spline points in the sections, otherwise mastering a smooth shape may become problematic.
The Tools > Sketching Tools > Face Curves option gives you a good idea of the shapes, which are not always clearly visible to the 3D representation.
