I want to extract surfaces from a prototype airplane (Carman wing) for example and build the mold to make it. I proceeded with offset surface with thickening to 0mm, but from there, it was no longer possible to find the function(s) allowing me to extract it and deposit it in a new drawing to make my mold.

Which version of Solidworks are you on??? Because you can use the function remove the face or delete/keep the body to keep the part you want but first make a configuration to keep the complete part in the defect and in the other the part to be molded; Then after that, you create 2 canister parts for the mold and you use the borrowed function but you have to be in an assembly to use it.
What is the purpose of wanting to create a surface from volume?
To make a mold, you don't need a special surface.
