I noticed that the sheet metal function works if I go through Insert > Sheet metal, but my sheet metal toolbar remains inactive...

Did you update or uninstall the 2014 and then install the 2015?
I strongly recommend the second solution and not the first.

Simply add the Sheet Metal toolbar.
If you didn't save your profile in 2014, when you migrated to 2015 you lose your personalization.
Right-click on the tab bar where you will find "sketch, mold, 3d migration, functions, etc... " and add Sheet metal. (See image)
But it's true that the 2015 is full of bugs.
I advise you to install the 2015 in parallel, without removing the 2014 version.
