On the symmetry function of sheet metal bodies there is something that escapes me and makes me waste time!
On a multibody sheet metal part, I create a symmetry function and select as many bodies as I want and everything works normally. On the other hand, if I want to modify this function and add an additional sheet metal body, I constantly end up with the message: "only one body can be selected in a sheet metal part". "False or badly translated" message because you just have to delete the other bodies and then resection everything by adding the additional body without even needing to redo a function.
In short, there is a functioning that I do not understand with my logic and that I have observed at least on the 2020, 2021, 2022 versions.

Hello; So technically I avoid as much as possible the Symmetry functions, already in the basic functions but even more so for sheet metal! But as this postulate does not bring grist to your mill I will elaborate a little:
When you symmetrize sheet metal functions, Solidworks has the annoying habit of combining them, which is a pretty normal way of working since at the end of the construction shaft there is the unfolded (or the flattening function if you prefer)... So if you take over or modify your already existing symmetry feature, Solidworks loses its footing and doesn't understand why you want to mirror a symmetry feature that it has already inserted into its " unfolded ".
In Solidworks 2022 it is, sometimes, possible to feint the software by raising the bocage bar above the unfolded (as close as possible to the symmetry function) and it is, from time to time, necessary to move the new functions to be balanced in the construction tree and/or to place the symmetry function as low as possible... But it doesn't work every time.
Yes, I was talking about body symmetry as in your initial example. Looking forward to 2024 then, because here I wanted to do the right thing, I told myself I'm going to use sheet metal functions to do sheet metal, well it's the last time because it wasted my time (at least twenty elements balanced x4
