Regularly the arrows indicating the cut bother me in my plans.
Can the gap be changed by moving it closer or further away from the workpiece?

Yes, just pull on the handle which is at the end of the cut line (not at the end of the arrow)
If you want to be precise, you can edit the cut line (and possibly add dimensions)

It's a matter of habit but I prefer to start with a constrained sketch and therefore I control the length and position of the cut, than to use the direct cut and which aligns with the length of the view in which you make the cut.
And if the question is to do it automatically in the options, I don't know it.

Normally if you right-click on the arrows and you edit the sketch, you reduce the sketch and it should be good.
For the solution of @Domino_Day , you draw your line with the mano, you side it (end position... Then you select your stroke and you press the cut icon and your selected stroke becomes your trim line.
Otherwise the other solutions offered also work (edit the sketch, pull on the handles...) So many ways of doing things that are all functional.
Yes, as you say @sbadenis we start from a sketch and transform it into a cross-sectional view. Solution that I also use for detail views in order to control the sketch and the constraints so that it doesn't move if we reuse this plan in future pack&go or tree copy.

I choose the @ac_cobra_427 solution which is simpler for me who doesn't do a lot of MEP.
On the other hand, what I couldn't catch is the point where you can edit the sketch. I naively thought that all you had to do was click on the arrow and pull it wherever you wanted (which didn't work.
By clicking in the right place (on the line and not the arrow as @froussel cautiously indicates) you can modify the sketch.
Simple when you know. - and one less PB for me!
