I am looking for a software that could allow me to make assembly instructions in the form of a video from 3D files.

The aim is to make it easier for our customers to assemble our products. In addition, in the video, add mounting materials (such as hammers, screwdrivers, etc.), annotations that cannot be explained by the video, etc.
To make your editing you have the classic problems of cinema, namely shooting by still shot or moving shot, then doing the editing and adding in your case a soundtrack for each shot.
For different plans, you can use Motion, which is included in some versions of SolidWorks. Motion allows you with its time line to zoom, rotate etc... Place multiple cameras. To look pretty, you need to use the included photorealistic rendering software, namely Photoview360 Or if you are in maintenance with a 2021 version and beyond you have Visualize which is more sophisticated. But with the Solidworks without Photoview you can already do very clean stuff
But for editing you need a video editing software personally I use CAMTASIA which allows you to edit the video track independently of the soundtrack, but you must find some on the net in Freeware if you are not looking for too sophisticated.
A little review! Before embarking on a production comparable to that of the video, I will rather study a film made from a technician who assembles the carpentry. It's faster and especially to make the different shots, zoom etc.
What for!
Under Solidworks you have to master Motion perfectly, which is not that easy. To make each sequence like on the video it will take you a lot of time. Each plan, especially if there are changes in view, is very very importantto do in SolidWorks. You have to make a storyboard otherwise you will have redundancies between the different shots and therefore waste.
