When I make a cut in an assembly, with extruded parts, it makes the surface cut for me, why and how do I restore the default options?

Are your parts part from a SolidWorks tree, or are they import parts (even if they appear to be volumetric)?
If they are import parts, make an import diagnosis on these parts.
If not, could you attach a picture of the problem.

I think the following box is to be checked when creating or editing the cut (you can edit a cut by right-clicking on the cut part):
Show Section of Cutting Displays a cut closure with the color specified in the Edit Color box . Disable this option to see the inside of the model.
