I don't think it's possible to create folders in the tree of a part or assembly.
The only parameter is sorted alphabetically, hierarchically, or in order of application.

You can create any folders you want. You just have to reference them in "system option/File locations".

I think @c.leroux's problem lies in the fact that if it moves its appearances to new folders, if these learnings have already been applied to some SOLIDWORKS files, they will get an error when opening.
Unfortunately, I don't know a solution to avoid this.

Thank you for your answers, Mick.Cordero, that's what I wanted to do.
Not having a solution to my question I will organize my files differently.
