When I want to wrap my sketch around my piece (ring), the sketch shifts and so my ring is not symmetrical.

Your problem is related to the centering of the sketch (what about some dimensions) indeed it seems to me that the winding function is done from an edge and not from the center which would be a construction line for example.
Similarly, the entire pattern must be on the piece otherwise it shifts or the function fails (look at the openwork at the top of your ring).
Can you post your piece, there's a simple solution!
