I can't remove material in the whole sketch plane! only if I select the sketch,

it's normal you can't create
Material removal or extrusion
without having a sketch of declared and open
So create or open a sketch plane
should solve the problem

In my house both work, by having the sketch open and then creating the removal of material directly in it then leaving it and doing the removal and selecting the sketch...
Try to repair the software by going to Control Panel panel\All Control Panels\Programs and features, search for Solidworks and then right-click on it, then modify and repair the individual installation

I think you want to do it directly after you've constrained the sketch. It's possible by clicking on the material removal right away while still in the sketch, there you don't need to re-select it

if I make a sketch (a single drill) on a bumpy square shape, for example! and immediately clicked on the material removal it works fine, but if I make a sketch with two holes! it's the second one that is selected (since it's the second shape in the same sketch) and when I remove the material only the 2nd hole does the function ...
Show us your sketch
a sketch that is selected if you have 10 holes
and that the said traits of these piercings are well selected
you will do as many removals of matire as you have closed perimeter
