On my MEPs, I have an infill thanks to the custom properties,
I would like to reactivate the option to check "Same as the specified layer.... " (see image below) because it allows me to fill the first page identically on all the others,
My question is the following, how do I make it no longer grey?

I think you need to have several choices in your drop-down menu to be able to activate the checkbox.
Here's what the help says:
When a sheet contains more than one template, and the drawing has notes related to a template's custom properties, select the view that includes the template whose properties you want to use. Unless you specify otherwise, the properties of the template in the first view added to the sheet are used. Or select Same as the sheet specified in the Document Properties if Use custom property values from this sheet over all others is selected on the Drawing Sheets document property
The phrase "same as the layer specified in the Document Properties" is not very clear.
Rather, it is:
Same as the sheet specified in the Document Properties!
The solution is to modify in the properties of the document directly (see image below)
so you have to check the last option and for my use, I wanted it to retrieve the information on my page 1,
