I think the easiest way is to apply an opposite force to each end of the spring.
This will simulate a torsional force.
See attached image
Make 1 mini surface on each end of the spring (negligible material removal) and apply a torque of the torsional force of the spring between these 2 surfaces!
Thierry Belben answered well but it only works for a fairly weak twist.
I don't think that simulation handles well in winding several turns (which is common on springs of this type) because then we would be in very large displacement (we can always try but it is not said that the calculation converges). In addition, the spring is often mounted on an axle or in a housing and the axle/spring contact is then involved in the calculation.
One solution would be to fix one end of the spring and attach the other to an axis on which the torsional stress is applied (in practice this is how the spring is compressed).
