I wanted to know if anyone knows why solidworks generates sky blue surfaces when registering a part assembly?
If so, how can you stop having these (ugly) surfaces?

Are they the boundary edges (open surface) that match in blue?
If this is the case, you need to change this color in the system options - colors - Surface, open edges.
Can you provide us with a screenshot of part of your result?

Isn't it because you checked the "outer faces" option to save the assembly in parts?
And so as @jmsavoyat says, you see the edges of its surfaces because they're in a special color.

I confirm the surface recording and not part of the assembly gives colors not beautiful and blue.
Exterior Surface is the default choice.
All the surface has a good rendering and has the advantage of being light
Part is interesting when you want to manipulate the assembly (make parts disappear (hide)
These are in fact the stops of the model on parts from suppliers!
Now how to switch them to another color I don't know...
