In fact I would like to be able to change some elements or create a new part file with my preferences and the fonts used in my company.

What's most interesting about models is sharing them. Indeed, when there are several of you using SolidWorks in a company, it is much easier to have the same cartridge, the same documents, the same bills of materials, etc.
To do this, you need to create a folder to which all users have access (for example on your server), and then deposit your templates there.
Then in "System Options", "File Location" point to the corresponding folder.
Thus we can share many elements: bill of materials model, appearance model, drilling assistance, welded construction profiles, part family model, design log models...
