Can we create on solidworks a type of fastener (arrow end of side) different from the existing one?

Yes, you can customize the fasteners. To do this, you have to go to the options, properties of the document and then dimension (see attached photo). In order for solidworks to keep your preferences, you must do the manipulation well before saving your plan templates.

You have to use the options here:

Otherwise, to change the width of the arrows, you must use the Dimensions menu in the document properties.

If I understand correctly and you want to create a new arrow for particular annotations (so don't use the dimension arrows), I don't think there's a way to do it...

otherwise what you can do is draw your arrow in the MEP then save it in bulk in a library and use it as you see fit....
